A colleague with an Atom D510 has just confirmed to me that lm_sensors
2.10.x in el5 does not support Atom CPUs, which explains why
sensors-detect does not detect the Intel Core family thermal sensor.
If anyone wants to backport Atom support into lm_sensors, I'll happily
include it.
In the meantime you're probably best off waiting for RHEL6 if you really
need support for coretemp.
The kmod-it87 package should support your ITE IT8720F Super IO Sensor
(above), which provides sensors for MB and CPU temps. Here you can see
my IT87 CPU temp correlates reasonably well with coretemp readings:
